Ingredients:
- 2 tablespoons almond flour (grounding and nourishing for Vata)
- 2 tablespoons oat flour or whole wheat flour (balances Kapha and Vata)
- 1 tablespoon coconut sugar or maple syrup (balances Pitta and Vata)
- 1/4 teaspoon cinnamon (warming, balances Vata and Kapha)
- 1 tablespoon lemon zest (refreshing, balances Pitta and invigorates all doshas)
- 1 tablespoon fresh lemon juice (balances Pitta and adds lightness)
- Pinch of salt (for flavour)
- 1/4 teaspoon baking powder
- 1 tablespoon melted coconut oil (or olive oil, balances Vata and Kapha)
- 1/4 cup plant-based milk (almond, oat, or coconut milk works well)
- 1 teaspoon vanilla extract
- Optional: 1 tablespoon raisins, chopped almonds, or pine nuts (for added texture and grounding for Vata)
Instructions:
- In a microwave-safe mug or ramekin, combine all the dry ingredients (almond flour, oat flour, coconut sugar, cinnamon, salt, and baking powder).
- Add the melted coconut oil (or olive oil), fresh lemon juice, plant-based milk, and vanilla extract. Stir until smooth.
- Mix in the lemon zest to evenly distribute the citrus flavour.
- If desired, fold in raisins, chopped almonds, or pine nuts for texture and added grounding for Vata.
